My oldest son loves breakfast burritos especially the McDonalds one. When he first started wanting them daily my husband was willing to buy them frozen pre made. I was not to willing to pay between $6 and $7 for 4 frozen burritos when he wants to eat them 5 days a week. He prefers a hot breakfast most mornings. So a set off trying to make him some breakfast burritos about a year ago and it took me a year to get it down to what he wanted. For a while he was fine with just egg and sausage claiming he did not want cheese on them. Then when we started using his best friends mom as a sitter he started telling the sitter he wanted cheese in them. I have tried shredded cheese and velveta cheese. He didn't like either of them.
So this summer as he was eating a McDonald's breakfast burrito I grabbed his second one and took a bit and looked at it because he says that's what he wants it like. It hit me I need to use a cheese sauce like cheese wiz or something.
So for I added cheese wiz to my shopping list for when I was ready to make a batch. I could find it so I got a jar of Ragu cheese sauce.
It is actually cheaper when I finally did find it so I am using this.
This first batch I made my son was in the kitchen and saying no I don't want that. So I made one burrito with the cheese sauce on it and let him try it. His reply was 'MMMM that's good!"
So here is what I do. I crumble a pack of sausage browning it in a pain. Place that on a plate to drain with a paper towel. He prefers a bacon and pork sausage. Then cook any where from 18 to 22 eggs scrambling them.
Then mix the sausage and eggs. I let the mixture cook just a bit as I get my tortilla ready. I like to heat the hole package of tortilla in the microwave so they are moveable.
Then I start to fill and fold them.
I also put my cheese sauce in a ziplock Baggie to make it easy to put it on this time.
Once everything was in I folded them.
Above is the first two folds I make.
I place them in bags and froze them labeled with Breakfast burrito cause I freeze left over taco meat already folded up like a burrito for work so if I don't have left overs or time to make lunch.
Then end product is about 2 weeks or more worth of breakfast for my oldest son.
And myself sometimes. They are very good. I haven't done the math lately since I started doing them this way but at one point I was spring about .45 to 50 cents a burrito. That is great!!!
